"Gamay ( from Debourg) destemmed by hand, Chasselas (Quincy, Loiré) whole bunch 2-3 weeks in concrete tanks. Chardonnay and Aligote from Maçon fermented whole bunch in Amphore before everything is brought together and left to rest in oak foudre for 12 months before bottling."
