"Paper artisan Jans Klimeš and his architect wife Nada lived in Prague for fifteen years before moving to the remote countryside near Tabore to restore barn in 2013. Exploring his new surroundings, Jans began experimenting with tapping birch trees in nearby forests for their sap and incapsulating the sap in bottle with ingredients like seeds, flowers, berries, teas, and grape skins. Once bottled the sap goes through a slow lactic fermentation and a long gentle infusion resulting in an evocative, healthy elixir with 0% ABV."
