
A lightly sparkling stunner from first time on the West Coast Fattoria al Fiore.
"In a large tank, fully filled with carefully selected ripe Steuben grapes, only the juice that comes out by its own weight (free run) is used for Piacere!, while Ciao! Ciao! uses 200% of the remaining skins and seeds relative to the juice, so the tannins are moderately extracted.
As an approach to this wine, it is bottled immediately after fermentation ends without fully settling the lees, resulting in a wine with a slightly stronger turbidity. Malolactic fermentation occurs inside the bottle, making it dry, slightly tannic, and a bit fizzy. We crafted this wine with this image in mind. Because the maceration period is long, if you wait patiently until next year, the umami will become stronger, the flavor will settle, and you will be able to enjoy it even more deliciously."
