"Tailleurs Cailleurs (meaning pruners-pickers) are based in the village of Saint-Jean-Ie-Vieux, on northern side of Bugey. Here Chloé Bey and Jordan d'Osualdo farm a number of small plots spread across the area, working organically and biodynamically in order to promote a healthy and active ecosystem around the vines. In the cellar no sulphur is used at any stage and all wines are aged in demi-muids before bottling without filtration.
Kovè is Mondeuse and Gamay from a south-west facing plot growing in limestone at 300m altitude in Varey. Velvet smooth with beguiling aromas of exotic spices and graphite married beautifully with crunchy raspberry and blackcurrant fruit. "
